Cooking, just like any art form or really anything in life, is full of myths that have spread over the years without question. While there isn’t much harm to many of the most common cooking myths, you could certainly save time and perfect your craft by laying many of them to rest and by changing little things in your cooking style.

 

You Always Need to Preheat Your Oven Before Putting Food in

Many of us think that if we don’t preheat our oven, the whole recipe is ruined. The instructions tell us to preheat, so why would we skip that step? But, in most cases, when you’re roasting meat or cooking vegetables for example, preheating is a step you don’t have to be so concerned about. That’s because the food will cook as the oven heats up (which is relatively fast anyway). That said, if you put food in the oven before it’s fully warmed up, you may need to adjust your cooking time to accommodate as needed so everything gets fully cooked.

However, if you’re baking something with eggs or flour like bread or cookies, then you need to preheat the oven. For example, if you place bread dough into a cold oven, the yeast won’t have the instant heat-push it needs to raise the dough. So, as a rule of thumb, if the recipe doesn’t have eggs and/or flour, feel free to skip preheating.

Measuring Utensils Are All Created Equal

While one would think that all measuring cups and spoons are the same, small variations in manufacturing can lead to inconsistent sizes. What is a tablespoon to one company might be slightly different for another, and your recipes could suffer or just taste differently because of it.

When precise measurements are a must for something you’re making, skip the spoons and cups and opt to measure your ingredients by weight instead. For every at-home pro baker, a kitchen scale can be one of their most important tools. All Salt Is the Same

While all tasting, well, salty, table salt, kosher salt, and sea salt all have different textures and grain sizes, which means that a pinch of table salt will pack more of a salty flavour than a pinch of kosher salt. You don’t need a microscope to see this difference either as it’s readily apparent if you look closely. Make sure that you’re using the right salt that a recipe calls for and are measuring it out (or weighing it) to keep your food perfectly seasoned.

Adding Salt Will Make Water Boil Faster

Speaking of salt, have you heard that adding salt to water will make it boil faster? There is some science to back this myth, as salt does raise the boiling point of water, but that just means it’ll get hotter—it won't boil any faster. Instead, if you need hot water in a pinch, you should invest in a quality electric kettle that neatly sits on your benchtop and can boil water incredibly fast.
